Cherry-Almond Chocolate Clusters
1 cup dried cherries
1 cup whole almonds, toasted and roughly chopped
2 c good quality chocolate chips
(I used a mixture of Ghiradelli semi-sweet and milk chocolate. You can use more chocolate if you need it.)
In a microwave-safe bowl, microwave chocolate chips on 60% power for 30 seconds. Stir. Repeat these two steps until chips have almost completely melted. Stir until smooth. When chocolate is melted and glossy, add cherries and almonds and lightly stir to coat. Drop by teaspoonfuls onto parchment and refrigerate until firm. Makes 2 dozen candies.
