It's Cupcake Season


After every home football game, our local YoungLife group, a ministry that my family whole-heartedly supports, throws andAfter Party at some one's house for high-school aged kids. It's a very casual affair - nothing rehearsed - just a time for teens to hang out, play some ping-pong or FIFA on the PS3, chat with friends, and nosh.

I'm on the Ambassador Team {or A-Team}, which means that I cook, clean, set-up, send emails, collect money, chaperone and gopher. The A-Team provides the food for the After Parties - usually sodas, bottled water, salty snacks and baked goods. I almost always sign up to bring cupcakes. And now,  the kids who attend regularly look forward to them. {Insert ego stroke here}

I almost always use a cake mix that I doctor a little, but I always make the frosting from scratch. For the red velvet cupcakes pictured, I used a mix and topped them with my cream cheese frosting. Dee-lish.

This is my recipe - a Frankenrecipe of many other recipes I've found.

Andie's Cream Cheese Frosting
1 8oz. pkg cream cheese, softened
1 stick real, unsalted butter, softened
2 cups powdered sugar
1-2 T milk or cream*
1 t vanilla extract
1/2 t almond extract

Beat the cream cheese and butter together until fluffy and completely incorporated. Slowly add powdered sugar, 1/2 cup at a time, to the cream cheese mixture, mixing on low speed. Add extracts and beat until creamy, adding small amounts of milk to achieve desired consistency.

*I like my frosting a little on the softer, fluffier side, so I add a little more milk. But for a dense frosting, use less milk or omit milk completely.

  2. Sounds like a fun time and those cupcakes look DELICIOUS! Cream cheese frosting is the best ever.

    I'm stealing your term Frankenrecipe too ... I've been chuckling since I read that! I think ALL of my recipes can fall under that classification since I never follow any directions.
